The Deconstructed Burrito


Everybody loves a loaded burrito. Flour tortilla, refried beans, rice, meat, and avocado, topped off with salsa. Man, my mouth just watered! As good as they are, the only thing I dislike about them is the sluggish feeling that comes after having one. 

But, what if I told you you could enjoy the same burrito deliciousness without the food coma and with half the amount of calories?!

I have the perfect recipe for you!

My southwest chicken bowl is a deconstructed burrito recipe that will satisfy your burrito craving. It is easy to make and tastes fantastic, and by swapping a few ingredients you can fit this into any meal plan. we get a healthier version of a burrito meanwhile keeping all the flavors present and avoiding that crash.

Start by mixing all the seasonings in a small bowl. Use 1 tsp of each seasoning per every pound of chicken you cook. Next, slice your chicken breast lengthwise and ensure they are about the same width, so they cook evenly. Season the chicken breast and let them sit for a few minutes. Meanwhile, preheat your air fryer or pan. Cook the chicken at 365 degrees for 15 minutes, flipping the breast over halfway through. Depending on the size of your chicken breast, it might take a few minutes more or less to cook. Next, check the temperature of your chicken breast with a thermometer to ensure it is cooked. That temperature needs to be at 165 degrees. 

While your chicken is cooking, you can cook your rice and prep your toppings. 

Place a medium pan on the stove at low heat and add black beans, corn, garlic powder, and paprika. Stir it and remove it from the stove. Rinse and finely chop your cilantro. 

Use white rice as the base, and add your chicken, corn, and bean mix. Finally, top off with cilantro and green salsa.

Step 1

Mix all dry seasoning in a bowl. Use one tsp of each seasoning per every lb you use.

Step 2

Slice chicken breast lengthwise. Around ½ inch in width. Once sliced, season chicken breast and prepare for air fryer.

Step 3

Preheat the air fryer or pan to 365 degrees.Spray with cooking spray & place chicken in an air fryer/pan & cook for 15 minutes. Flip halfway through.

Step 4

Cook your black beans, corn, garlic powder, and paprika in a medium pan.

Chop cilantro finely for garnish. Assemble your bowl and top it off with green salsa!
