Whether you are an early riser or hit the snooze button a couple of times, your first meal should be a hearty one. A balanced meal should have a good amount of protein, carbohydrates, healthy fats, and vegetables. Protein and fats will keep you fuller for longer, and your carbohydrates will give you the energy to kickstart your day. My Egg white and spinach recipe is a great combination to have for breakfast and, of course, brunch. 

In this recipe, you will consume more protein and less fat using egg whites versus the whole egg. Our carbohydrate source is whole wheat bread, with tasty avocado as your healthy fat and spinach as our nutritious leafy green—a hearty, well-balanced meal. This recipe is easy to make, and you can use different vegetables to make your favorite combination.

Start off by prepping all your veggies. Chop your tomatoes in half and finely chop your spinach. Place a medium pan on the stove and set it to medium heat once ready add in your tomatoes. Meanwhile, crack your egg and pour the egg whites into a bowl, and whisk. Once your tomatoes are almost cooked, throw in your egg mix and add salt and pepper. Once the egg is fully cooked add in your spinach and flip your omelet in half. 

Top off with fresh avocado and serve with your whole wheat toast.

Chop spinach and tomatoes

Crack and whisk your egg and egg whites
